Prensagem (Vinhos Brancos)

Logo a seguir ao desengace/esmagamento (operação comuns à vinificação de tintos e brancos), as uvas brancas seguem directamente para a prensa para o mosto ser separado das grainhas e películas.

 

Recordamos que, na vinificação de tintos, a prensagem só tem lugar após a fermentação! De facto, aquilo que se pretende de um vinho branco é diferente do que se pretende de um vinho tinto. Um vinho branco quer-se fresco, leve. A vinificação de brancos na presença das grainhas e películas tende a tornar o vinho pesado, áspero, grosseiro… De salientar, porém, que a maceração nos brancos é uma opção viável, apesar de incomum, e encontramos grandes vinhos elaborados segundo esta tecnologia (e.g., Anselmo Mendes Curtimenta, Vinho Verde) 

 



 

Pressing (White Wines)

Immediately after the destemming/crushing operations (common operations in red and white wines vinification), white crushed grapes run directly to the press for must separation from skins and seeds.

 

We must remember that, in red wines vinification,  pressing takes place only after fermentation! In fact, what we want in a white wine is different of what we want in a red wine. A white wine must be fresh, light. The vinification of white in the presence of seeds and skins (mainly in order of their tannins concentration) tends to make the wine heavy, rough ... It should be noted, however, that maceration in white wines vinification is a viable option, although uncommon, and there are great wines produced according to this technology (eg Anselmo Mendes Curtimenta, Vinho Verde, Portugal)

VolteFace Tinto Reserva 2009

VOLTEFACE é um vinho tinto, alentejano, da colheita de 2009. A minha convicção de que teria a qualidade para ostentar o designativo de qualidade Reserva confirmou-se, ao obter a aprovação como tal pela CVRA. Na CVRA um vinho só é aprovado como Reserva se obter uma classificação superior a 70 pontos e a partir de 1 de Janeiro de 2015 terá de ter pelo menos 12 meses de estágio. VOLTEFACE teve 18 meses de estágio em barricas de carvalho francês de 225L. O engarrafamento está para breve!

VOLTEFACE is a Alentejo 2009 red wine. My conviction that it's quality would deserve the quality designation of "Reserve" was confirmed by obtaining approval as such by the CVRA. CVRA only approve wine as Reserve when it obtains a rating higher than 70 points, and from January 1, 2015, an ageing of at least 12 months. VOLTEFACE aged 18 months  in 225L French oak barrels. The bottling is coming soon!

O desengace/esmagamento é feito geralmente por uma máquina desengaçadora/esmagadora. O desengace corresponde à separação dos bagos do engaço. A importância do desengace reside no facto dos engaços serem muito ricos em substâncias amargas e adstringentes (taninos) que, quando em excesso, tornam o vinho desagradável, como vimos anteriormente.

 

O esmagamento consiste em provocar a ruptura das películas e o esfacelamento da polpa (sem danificar a grainha) para extrair o máximo de sumo, fazendo, e.g., passar os bagos de uvas por entre rolos que as apertam.

 

Antigamente o esmagamento das uvas era feito com os pés: pisa a pé! Esta é uma metodologia adotada ainda por alguns produtores.



A grape destemmer and crusher machine is usially used to destem and  crush the grapes. Destemming refers to the separation of the berries from the stems. The importance of this operation is that the stems are very rich in bitter and astringent substances (tannins) which, when in excess, makes the wine unpleasant (as we saw earlier).

 

The crushing causes the rupture of the skins and the disintegration of the pulp (without damagins the seeds), in order to extract as much juice as possible.

 

Formerly the crush was done with the feet: foot treading! This technique is still  adopted by some producers.
