Por vezes, sobretudo quando se pretende produzir vinhos de elevada qualidade, antes desta descarga as uvas passam por uma mesa de seleção de uvas ou tapete de escolha onde os operadores se encarregam de escolher as melhores uvas e dispensar aquelas que não correspondem à qualidade desejada. Só então são descarregadas para o tegão, previamente seleccionadas.

Grapes Reception
After being harvested, the red or white grapes are transported to the winery as fast as possible (we don´t want them to begin fermentation without our control, especially in the case of mechanical harvesting). Then they are discharged into a "giant container" called reception hopper. This hopper drives the grapes to the destemmer /crusher either by a conveyor screw or by vibration.
Sometimes, especially when we want to produce high quality wines, the grapes are first selected in a sorting table: there, the operators select the best grapes and dismiss those that do not match the desired quality. Only after that the grapes are discharged into the hopper.

Vinhos Tintos e Vinhos Brancos: Apenas uma diferença de tipo de uvas?
Quando nos deparamos com um vinho tinto e um vinho branco, uma diferença entre eles é óbvia: a cor… Normalmente o vinho tinto é feito com castas tintas e o vinho branco com castas brancas. Mas será só aqui que reside a diferença entre estes dois tipos de vinhos? Serão, de resto, feitos da mesma maneira? Não!
A vinificação – conjunto de operações de transformação das uvas e/ou seu sumo em vinho – de vinhos tintos é diferente da vinificação de vinhos brancos!
Mas para melhor explicar esta diferença, teremos de percorrer as várias fases de uma vinificação clássica. Vejamos então os esquemas gerais de vinificação de vinhos brancos e tintos, para que nos possamos dar conta destas diferenças:

Este quadro permite-nos perceber que, logo de início, se bifurca a metodologia de vinificação entre brancos e tintos. Analisemos pois, fase a fase, todo o processo de vinificação.
Red Wines and White Wines: Does the difference consist only in grapes kind?
When faced with a red wine and a white wine, a difference between them is obvious: the color ... Usually, the red wine is made with red grapes and white wine with white grapes. But that´s not the only difference between these two types of wines. In fact, they are not even made the same way.
The red wine vinification - set of transformation operations of grapes and/or its juice into wine - is different from white wine’s one!
But to better explain this difference, we have to go through the various stages of the vinification. Let’s have a look to the general vinification schemes of white and red wines to better be aware of the differences:
