Como sabemos então quantos graus de álcool vão dar as uvas que temos na vinha?

A partir de uma certa altura em que acreditamos que, intuitivamente, deveremos começar a controlar a maturação das uvas – de forma a colhê-las na altura certa – começamos a fazer “colheita de bagos”. A colheita de bagos consiste em colher na vinha, aleatoriamente, um número representativo de bagos das uvas que pretendemos analisar. Geralmente esta colheita faz-se por castas e por talhão (já que a maturação das uvas varia de casta para casta e, dentro da mesma casta, de talhão para talhão).

 

Um talhão é uma parcela da vinha relativamente homogénea em termos edafo-climáticos, delimitada por corredores.

 

A medição do açucar faz-se geralmente recorrendo a:

  1. Mostímetro: as uvas são esmagadas, o sumo é colocado num copo alto e nele introduzimos um  mostímetro que nos dá a densidade do mosto, que será tanto maior quanto maior o seu teor em açúcar. Recorrendo a uma tabela, podemos ver a que quantidade de açúcar corresponde aquela densidade, e o respetivo álcool provável que o vinho vai obter.
  2. Refratómetro: de uma forma mais expedita, obtemos o açucar das uvas quando colocamos uma gota do sumo da uva no prisma deste aparelho.

Quando deve ser feita a vindima?

Devemos vindimar as uvas consoante o grau alcoólico que queremos ter no vinho, ou melhor, consoante o tipo de vinho que queremos, que depende naturalmente do grau de maturação das uvas. Esta escolha tem de ser razoável, legal e adequada à casta em questão!

 

Em Portugal, um vinho de mesa tem de ter um teor alcoólico mínimo de 9% vol..

Obedecendo aos padrões da moda dos últimos anos, – que também os há no mundo dos vinhos – assistimos a uma tendência para se fazerem vinho com elevados teores alcoólicos, obrigando à necessidade de colher as uvas bem maduras. No entanto, temos assistido recentemente a uma mudança de gostos, com preferência por vinhos de teor alcoólico mediano.

 

Naturalmente que é necessário ter em conta todas as transformações que ocorrem na uva ao longo da sua maturação (e não só o aumento da concentração de açúcares) para que se possa agendar a vindima de acordo com o produto final desejado. Por exemplo, ainda que queiramos um vinho com elevado teor alcoólico, não nos podemos esquecer que o aumento de concentração dos açucares na uva faz-se acompanhar por uma diminuição da acidez, sendo esta desejável não só por razões qualitativas mas também por haver limites mínimos legais. Por outro lado, também determinados compostos aromáticos vão aumentando ao longo da maturação para, a partir de certa altura, decrescerem…

 



 

How do we know, then, how many degrees of alcohol will we get from the grapes we have in the vineyard?

From a certain point where we believe, intuitively, we should start controlling the ripening of the grapes - in order to harvest them at the right time - we begin "picking berries". That consists in harvesting, randomly, a representative number of berries that we intend to analyze. Usually this is done harvesting by grapes and by limited fields (since the ripening of the grapes varies from caste to caste and within the same caste, that limited field to another limited field).

 

In that limited field we find a considerable homogeneity of soil and climate characteristics.

 

The measurement of the sugar is usually done using:

1. Hydrometer: the grapes are crushed, the juice is filtered and then we measure the density of the wine with that hydrometer. The higher is the sugar content, the higher will be the density. Using a chart, we can see that the amount of sugar that corresponds that density, and its probable alcohol content.

2. Refractometer: in a more expeditious manner, we can measure the sugar of the grapes when we put a drop of grape juice in the quartz prism of the refractometer.

When should we harvest, then?

We decide to harvest depending on the wine alcohol content we want to achieve and depending on the type of wine we want. This choice has to be reasonable, legal and appropriate for a certain grape variety!

 

In Portugal, a wine must have a minimum alcohol content of 9% vol..

 

Obeying the recent fashion standards of the wine world - we witness a tendency to make wine with high alcohol levels, leading to harvest high ripen grapes. However, recently the preferences seem to change, to wines with a medium alcohol content.

 

Of course it is necessary to take into account all the changes that occur in the grape throughout their maturity (and not only the increase of sugars) so you can schedule the harvest according to the desired final product. For example, although we want a wine with a minimum alcohol content, we can not forget that the increased concentration of sugars in the grape is accompanied by a decrease in acidity, which is desirable for reasons not only qualitative but also because there are legal minimum limits. Moreover, certain aromatic compounds will also increase through to maturation, but from a certain point will start to decrease.

Neste blog o meu objetivo é que os leitores fiquem na posse dos truques e mistérios que se escondem por trás do copo de vinho que bebem. Não pretendo facultar informação exaustiva de tecnologias, química ou equipamento de adega -  isto não é uma formação para enólogos, mas sim para enófilos e sobretudo para enófilos em potência - ainda que esteja disponível para esclarecer todos aqueles que queiram aprofundar um determinado assunto.

 

O meu objectivo é, no fundo, que seja capaz de interpretar uma garrafa de vinho, entender o que querem dizer todos aqueles palavrões inscritos nos rótulos e contra-rótulos, participar activamente numa conversa sobre vinhos.

 

Mas, fundamentalmente, aquilo que eu realmente quero é que se sinta com mais armas para saber apreciar qualquer tipo de vinho e para ser cada vez mais exigente: numa frase…

 

 …que fique a gostar mais de vinho!

 

In this blog my goal is to promote that who reads it get to know all the mysteries hidden behind the glass of wine they drink. I do not intend to provide exhaustive technological, chemical or cellar equipment information - this is not a training for winemakers, but for oenophiles and especially for future oenophiles. However I'll be ready to answer all those who want to learn more about a particular subject.
 
My goal is that my readers become capable to understand a bottle of wine (all the informations written in the label) actively participate in a conversation about wine and, fundamentally, evaluate any type of wine, being increasingly critical and demanding: in a few words...
